What's For Dinner?

It seems most of us are caught in the grip of the frigid air sent to us by our Canadian friends.  Wink  I was just wondering what your favorite "cold weather" food is?  I usually fix a big pot of chili, but Mr. Irish had a colonoscopy yesterday which ended up with the removal of a couple of small polyps.  He is supposed to avoid spicey foods for a few days so that puts an end to the chili idea.  I'm thinking maybe some chicken and noodles or maybe some potato soup, any other ideas?

Sounds yummy.  Right now I have a chicken boiling.  I plan to make it into a chicken stew in a little while.  That's my hubby's favorite cold weather meal (And it lasts for a few days!!) :wink3:

last night, we had buffalo (happy buffalo which roamed wihtout human contact until you know) roast.  i seered the roast and then stuffed in garlic slivers, rubbed it in dijon mustard and added a 1/4 cup of red wine to the pan.  in addition to the yummy gravy that my mother made, we had beets and carrots...my mum and aunt had red potatoes but they are on my no no list.  it was definitely comfort food.   Smiley

It wasn't a big deal............About 10 years ago he had his first colonoscopy because of his family history.  At that time they found a couple of precancerous polyps and removed them.  He has had followup procedures every 3 years since then.  The polyps they removed this time were very small and appeared to be benign.  That's the beauty of this technology, you can stay on top of the situation and catch anything before it has a chance to develop into anything serious.  He went back to work this morning and was feeling fine.  He just has to watch his diet for a few days............no popcorn, nuts, or spicey food.
 
Our dinner turned out to be chicken (the KFC variety, he thought that sounded good).  I was ready to cook chicken and noodles, but he decided to give the cook a break this evening.

My fave cold weather food is clam chowder. Not from a can Wings, but from the nuker. (microwave)  Wink  Easy easy to do, and yummy in your tummy.  
 
However, tonight we had deli from the grocery.  Grin
 
PS. CM, I'd like your recipe for chicken stew. Smiley

Chicken Stew....
One whole chicken(grocery store variety only)Wink
2 10 oz.bags of frozen chopped onions(saves time)
about 6 large potatoes, peeled and cubed.
1 bag each of frozen,  creamed and whole kernel corn.
2 cans stewed tomatoes
1 12 oz. can of tomato paste
chili powder (about 2 TBSP)
salt and pepper to taste
Boil and debone the chicken, I add the chili powder to the water while  the  chicken is cooking.
Next, add the onions and tomato paste to the boiling water, with the deboned chicken.
After the onions are tender, add your potatoes, and salt and pepper.  At this point, you must keep the water at a rolling boil, to prevent potatoes and chicken from sticking, and scorching. :uhoh: (they should boil at least 30 minutes to be soft enough).
Add the stewed tomatoes while the potatoes are cooking.
The last thing you do before serving, is add the corn.  If you add it too early, there's a really good chance the creamed corn will stick.
(My family doesn't like creamed style corn, but doesn't know it's in there.  It seems to make the stew a little thicker in the pot)
It's a super easy recipe, and it lasts for a few days(it's really better the second day than the first).
