I just made a delicious new dish and I thought I'd share it with those of you that like to tinker in the kitchen.
 
Now I'll forewarn you that my recipes never include exact measurements. Wink  I don't work in exact measurements, I just throw in whatever amount seems right Grin and then taste it to make sure.  
 
 
Cranberry Tuna
------------------------
finely chop up some yellow onion, I don't use a lot of it, but I don't like a lot of onion anyway. Use as much onion as you enjoy.
 
Throw that in a bowl along with some sweetened dried cranberries (again, as much as you like, I used probably somewhere between a quarter cup and a half a cup).
 
Then squirt lemon juice over the top of it, enough to splash over everything (although if you are a huge lemon fan, again you can use more).
 
Then I opened 3 cans of all-white tuna, dumped that on top of it.  
 
Then some mayonaise (I personally use canola mayonaise, but I'm sure regular will do) - about as much mayonaise as you'd normally use on tuna.
 
Stir it all up and then cover it.  Stick it in the fridge overnight.  You can actually eat it now, but it's better if you let the cranberries re-hydrate in the juice, in the fridge overnight.  
 
Delicious on sandwhiches or crackers. Smiley
