ok, here is an example of pasties.  They are basically baked in a pastry type of coating, traditional has ground beef, potatoes and onions.
 
I prefer the vegetable ones or sometimes the chicken ones.
 
Here are a few examples:
 
 
 
Pastie Stroganoff
The original Beef Pastie topped with our special blend of gravy, sour cream and chives. $5.80
     
Original Beef Pastie
Our Beef Pasties are made from a traditional pastie recipe from Cornwall, England. Made fresh daily in our kitchens with our custom cut of beef, fresh vegetables and seasonings baked in a crust to a golden brown. $4.55
 
Chicken Pastie
Diced Chicken with potato and other fresh vegetables baked in a crust. $4.55  
 
Vegetable & Cheese Pastie
A mixture of broccoli, cauliflower and other fresh vegetables and cheeses baked in a crust. $4.55
 
Vegetarian Pastie
Made without meat or dairy products. Fresh vegetables flavored with a mild Picante sauce baked in a vegetable shortening crust. $4.55

Your title, "local foods" caught my attention.  We are having the SE Texas Fair in Beaumont and the food sold there is the main topic on the news these days.   Anything and everything "on a stick", anything and everything deep fried.  The kicker tonight was deep fried dill pickle stuffed with Reese's.   OMG!  If I was brave enough to try that, I'd probably spend the rest of the day regretting it.    Oh, I did hear about chili and rice in a cone.  I heard about it, didn't see it.  It probably would be ok if the cone was made with a tortilla.
