Question about websites - Geek help needed here

It would help me greatly to know:

what is the process of taking a website off the internet and putting up another one in its place?

in other words I have ABC.com and am sued by ABC. So I say sorry and try to get ABC.com off the net right away.  How long does that take?  2 days?

Then I want to keep the same content but now I use NOP.com.  How long before everyone sees NOP.com - my client says about 2 months.

and also, if ABC know that my company took their domain name in the first instance then might they not do some corporate espionage on me to see what other domain names I register?    Can ABC do some sort of daily watching search on me to see when NOP.com comes up as registered to me, for instance?

thanks in advance

It's easy to keep the same content.  The registration of the name is quick, however for the change to get replicated through the Net is a very very long process.

The big problem is what do you do about cached information?  You can see very old pages from Google as an example.
